Spinach Pie


The other day I saw a picture of a spinach pie with a potatoe crust on Pinterest. It didn't come with a recipe, as it seemed to be a photo of a dish in a restaurant, so I improvised my own: I precooked the potatoes, sauteed the spinach with an onion and garlic and mixed it with silken tofu, adding a touch of feta cheese. It did not look as perfect as the one on Pinterest, but I was quite proud of it though, and it tasted really nice. I just ate a handful of radishes with it.
For my midmorning snack I brought a container of oat flakes which I ate with the soy milk I keep at the fridge in the office.

Mexican Lunch



For this thematic lunch I made chili sin carne, quesadillas and mini tomatoes filled with guacamole.
The quesadillas are really easy to make, I learned it the other day on the internet: Place a tortilla in a hot pan without oil, sprinkle some grated cheese on it and put another tortilla on top. When the first tortilla starts to brown slightly,flip the whole thing and wait until the other side is slighty brown, too. Serve cut into quarters.

Soup and Pretzel


For this lunch I brought a tomato soup with pumpkin, white beans and little dumplings. I accompanied it with a pretzel - a convenience product that I just put in the oven in the morning. My snack were little skewers with mandarines and pieces of fennel, marinated in a ginger-vinaigrettte.

Nuggets with Puree


This is probably one of my favourite lunches, because it reminds me of my childhood. I had chicken nuggets then, tofu ones now, but apart from that, nothing has changed - nuggets, potato puree and a mix of peas and carrots from the can.
Yes, okay, all of these are convenience products, but they are food for the soul, and I love the fact that I can prepare this lunch in ten minutes.
Obviously I also brought a banana ask a snack.

Aubergine Curry and Ricepaper Rolls




I cheated again. Well, if you want to call it cheating. When I'm having dinner at my favourite Indian restaurant, I always ask them for a doggy bag, so here I brought their delicious aubergine curry.
I also made vegetarian jelly as dessert.
My midmorning snack were ricepaper rolls with vegetable filling, Italian style. Again I separated the sticky ricepaper rolls with pieces of carrots.

Fried Vegetables and Waffles



For this day I brought fried vegetables that I ate with white (soy) yogurt as a sauce. I wanted something a bit more juicy for a side dish, so I improvised a spicy puree with tomatoes, corn and pumpkin.
I'm quite proud of my snack, because this is the first time that I managed to make waffles without an egg (substituting it with soy flour), they usually fall apart when I try to take them out of the waffle maker. I read that you should allow the dough some time to rest so the gluten of the flour can develop and make the mix sticky enough. It seems to work!

Cabbage, Lentils and a Smoothie



More cabbage! I just love it. My lunch was a dish that's typical in the Western regions of Germany and is basically cabbage, potatoes, leek and carrots cooked in broth and spiced up with (in my case: veggie) sausages. It probably wins the first price for the dish with the weirdest name on earth - Schlabberkappes. Believe me, it sounds strange even for a German.
I also made Indian inspired lentil balls and brought some ketchup for dipping. My midmorning snack was a smoothie with fruits and beet.

Pasta, Lentils and a Bagel

Quinoa Salad and a Sandwich

I also made a grilled sandwich with homemade vegan cheese (which was kind of okay, nothing more) and brought one of the vegan lemon cupcakes I made for my birthday.
Actually for my birthday on the day before I had prepared a whole picknick basket with nice things, but then I unfortunately forgot to make a photo.

Pasta with Pineapple


My main dish today is probably the weirdest recipe I have in my repertoire: Pasta with a tomato sauce containing pineapple from a can. I don't eat this frequently but I like it from time to time.
I thought that my main dish needed a bit of a colour contrast, so I added my version of a "green salad" - one with cucumber, avocado and edamame.


I had quite a big second breakfast - bread with a homemade parsley spread, two cherry-tomatoes and two storebought seitan-sausages.

Fried Bread and Aubergine

This picture might need a bit of an explanation. Below we have little skewers with pototoes etc. for my midmorning snack. I combined the rest of the ingredients for lunch - we have fried bread, fried aubergine (transported separately so the bread would'nt get soggy) and vegan tzatziki in a separate container. Mix everything together and - yummy!

Fried Quinoa with Kimchi and an Equally Exotic Dessert

This day I did again what you should never do and made three new recipes at a time. Don't try this at home, kids! I have to say that none of the three really convinced me, although I finished everything.

I have to admit that I had never eaten kimchi before. I supposed I would probably like it , because I love sauerkraut so much, but it's really, really different and I still have to get used to it. The dish turned out totally okay, but I used too much sesame oil and couldn't really taste the rest of the ingredients, so that was probably not how it was supposed to be. I'll probably try this again at another point.
Then there's the dessert. This is sautauthig, the blueberry-corn-pudding of the Native Americans. This might not be a very unusual thing for you depending on where you live (Isn't the internet marvelous?), but believe me, for a German living in Spain it doesn't get much more exotic. It's not even very usual to find blueberries in the store, so when I spotted these, I just had to try something new. The dessert was nice, but, well, unusual.
And finally there are some stuffed mini-bell-peppers as a snack. I loved the idea of these, but will try another stuffing next time.

Potatoes with Parsley Dip


This was a day with a lot of dipping. My main dish were cold, cooked potatoes with a parsley-mustard-dip and glazed carrots. Yummy!
For second breakfast I brought fried polenta bars and a tomato dip. I'm really not into polenta, I try it time and time again, but I just don't love it. I find it okay though with something that has a dominant taste like this garlicy tomato spread.

Tomato Soup and Leek Pastries

For this lunch I brought a Mediterranean tomato soup that was absolutely delicious. I think the crucial ingredient was the spoonful of tomato purée, I really have to remember to add it in all my tomato dishes, it's just adds a much more intense flavour.
As midmorning snack and side dish I brought some vegetable pastries, which are becoming a real staple for me. This time they had a leek filling.
I also brought some radishes and a homemade "chocolate coin".

When I made the spinach quiche the other day, I had some leftover tomato sauce, so I added some corn and courgette and used it for this pasta dish. I brought some grapes as dessert.
My second breakfast was crunchy muesli with soy yogurt.

Mexican Rice and Corn Fritters

For this lunch I made the Tomato rice with peas from A vegan taste of Mexico, plus a couple of corn fritters. For second breakfast I had a delicious vegetarian Reuben sandwich with seitan and sauerkraut, accompanied by some raw vegetable sticks.
